These gluten free buns are salty and crispy on the outside with a soft, sweet, doughy centre, and they have none of that bitter gf flour flavour. They’re also rice and egg free and can be made without dairy. And because you knead the dough with an electric mixer, they’re also pretty easy to throw together. Unlike many gluten free bread doughs that tend to resemble cake batter, this recipe results in a dough that can be worked with and shaped, making it quite versatile.  Try using it to make gf bread sticks!

gluten free tortillas made with black beans

Black Bean Gluten Free Tortillas. gfandme.comNecessity really is the mother of invention. Geoff and I were invited to dinner the other day. The host was preparing enchiladas (OMG they were soooo good!). Thinking I could whip up a batch of our potato flour tortillas, I offered to bring some. Seemed like a great idea at the time, but when I went to make them – and of course I left it to the last minute – I didn’t have all the ingredients, so I improvised. Am I ever glad I did! These gluten free tortillas made with black beans may not be the prettiest, but they taste great, roll out well, stay soft, and don’t turn to mush in baked dishes. Out host sent us home with some left overs and these were still fantastic three days later! We haven’t tried them as a wrap yet, but I’m sure they would be perfect.

What’s a tortizza, you ask? It’s the super-tasty, super-easy single-serving “cheater” gluten free pizza that uses the dough for gf and me’s potato flour tortillas for the crust. They make a great after school snack or quick lunch. Keep a jar full of the dry ingredients for the dough on hand and whip them up one or two at a time as you need them.

gf and me’s potato flour tortillas

These gluten free and dairy free tortillas taste like wheat tortillas and won’t go soggy when baked in dishes like enchiladas. They taste great and are easy to make. The recipe below makes 9 – 10 tortillas but you can also mix the dry ingredients together in a large batch and store in a sealed container. When you want a tortilla, combine the dry mix with water at a ration of about 2:1, adding water by the tablespoon if needed. In other words, one cup of dry ingredients and 1/2 cup water will make 4 four-inch tortillas, 1/2 cup dry ingredients and 1/4 cup water will make two!

potato flour tortilla. gfandme.comTIP: If you find yourself missing a good ol’ peanut butter sandwich, try slathering a tablespoon or two of your favorite peanut butter onto one of these. Amazing! OR Try one wrapped around a hotdog for a great summer treat.
