tina’s three-ingredient slow cooker pulled pork
Throw three simple ingredients in your slow cooker in the morning and have amazingly tender pulled pork ready for dinner. Serve it on a gluten free bun (or Udi’s bagel as shown here) with coleslaw or potato salad and a New Planet Blonde Ale – can summer evenings get any better?
Great for informal entertaining, this pork tastes like BBQ ribs but is soooo much easier! It is inspired by our sister-in-law’s recipe. Thanks Tina for the recipe and for all the great GF meals!
gf and me’s old fashioned nut butter cookies
Make these soft, chewy, and not-too-sweet gluten free cookies with your favorite peanut or almond butter. The choice is yours, but make a double batch ‘cause they won’t last long – and they are even better the second day!This is a conversion of one of our favorite pre-GF recipes.

geoff’s favorite oatmeal chocolate chip cookies
slow cooker swiss steak – great for hot summer days
Braised in a garlic and onion tomato sauce that is fantastic served over rice or gluten free noodles, this steak is melt-in-your-mouth tender. AND it is prepared in the slow cooker which is great on those busy days – summer or winter. Throw everything in the pot in the morning, turn it on, and dinner is ready at five o’clock – right when the last thing you feel like doing is cooking a meal!
ice cream – a recipe good enough to scream for
If “we all scream for ice cream,” why is there gluten in it? Really, ice cream should be inherently gluten free but some brands aren’t and others may be cross contaminated. If you make it yourself, you KNOW it’s gf (and you can control the fat content). Besides, it’s fun to do and this recipe is soooo easy, your kids will want to do it. It makes about 5 cups of premium flavoured vanilla ice cream but can be used as a base for other flavours. See below for some suggestions, but the only limit is your imagination!
You will need an ice cream maker of some sort. We use a Cuisinart model and it works great, but if you don’t want to buy an expensive electronic model, try one of these ice cream balls from LL Bean instead.
take-a-long oatmeal bars
When you’re eating gluten free, snacks and quick meals can be hard to come by. This versatile recipe makes 15 chewy take-a-long bars that taste great and are stuffed full of good things.
Note: Not everyone who has celiac disease can tolerate oats, even when the oats are gluten free. If you have questions, talk to your physician or dietitian.
trimble cake – believe it or not, this is gluten free
Trimble Cake is a luxurious Orange Chiffon Cake that my mom always made for birthdays or special occasions. She would bake it in a tube pan and ice it with sticky and oh-so-sweet seven-minute frosting. But baked in an oblong pan, it adds a delicious twist to strawberry shortcake, which is how it is prepared here. It’s named after the neighbour who generously gave my mom her amazing recipe.

Geoff’s Chicken
What is Geoff’s Chicken? Melt-in-your-mouth-tender pieces of chicken in a creamy tomato and onion sauce with hints of garlic and just a bit of peppery heat. Serve with rice and a tossed salad for a complete meal!
This is a conversion of one of Geoff’s all-time favorite meals. It takes a bit of time in the oven, but it’s super easy to prepare.
gf and me’s chicken satay
In this dish, sweet and savory come together to transport you to paradise. Satay is perfect party fare – especially when served with peanut sauce – but we like it so much, we pair it with jasmine rice and stir fry vegetables for a light meal.
Marinate the chicken overnight and you can have dinner ready in in 30 minutes!

dolores’s delicious enchiladas – now gluten free
This is Geoff’s mother’s recipe for enchiladas – straight from Yuma, Arizona. Serve these on a hot summer’s day with Spanish rice, refried beans, a tossed salad, and, of course, a gluten free beer. They taste absolutely fabulous and the whole meal takes less than 30 minutes to prepare!
One of our all-time favorite meals, we were finally able to convert it to gluten free with our potato flour tortillas.
