freeze and bake gluten free sugar cookies. gfandme.comPerfect for snacks, when company drops in, or those midnight tea and cookie cravings (and if you’re like me, they happen more often than you want to admit!), this cookie dough can be made ahead of time, frozen, and then sliced and baked as-needed! This is also the perfect recipe if you are not gluten free but would like to keep something on hand for that special gf person who comes by (just make sure to watch for any cross-contamination). They taste great too – a bit like a coconut shortbread cookie. The flavour is mild and can easily be enhanced with a few chocolate chips, a bit of mint extract, orange zest, or whatever you can think of! They are also great dipped in melted chocolate and cooled 🙂

gluten free pumpkin tarts

pumpkin tarts. gfandme.comI found this fabulous recipe for pumpkin cupcakes on fantasy author S. J. Wolff’s blog,  Wolff’s Realm. I converted it to gluten free using coconut and rice flours, and the result was awesome! The cupcakes disappeared before I could even get a photo! So I made them again, and this time I made them into gluten free pumpkin tarts by adding a ginger cookie and coconut crust. The ginger and coconut flavours combined beautifully with the pumpkin, the crumbs added a bit of texture, and the tarts also came out of the pan easier. And this time, I didn’t tell anyone about them until I had a picture to post!

This filling would also be great with Mary’s Magnificent Pie Crust!

gluten free Dad’s cookies!

gluten free dad's cookies. gfandme.comDo you miss those crispy, spicy prepackaged Dad’s cookies? Geoff certainly did. This recipe for gluten free Dad’s Cookies is the culmination of a long process of trying to get just the right flavour and texture of those little marvels in the bright yellow bags. One result was posted here earlier under the title Coconut Oatmeal Cookies. They were good, but too tender and too spicy to be truly called a Dad’s cookie copycat! These, however, come very close to the real thing, so go ahead, eat them by the handful, dunk them in your milk, or dip them in your coffee. Yummmm.

Note: Not everyone who has celiac disease can tolerate oats and oat flour, even when they are certified gluten free. If you have questions, talk to your physician or dietitian.

coconut oatmeal cookies – gluten free and spicy

If you’ve been following our blog, you’ll know that due to circumstances that should have been totally under our control this is the second round of photographs for these cookies. But I have to say, they are worth the effort. These soft and chewy little bits of gluten free heaven are full of the flavours of cinnamon, all spice, and coconut. Geoff says that they remind him of a Dads coconut cookie but without the crunch. Dads were one of his favorite b.c. (before celiac) cookies (the other being chocolate Oreos. Anyone have a recipe for chocolate oreos?) Judging from how quickly these are disappearing, I’m guessing they are going to be a new favorite around here. gluten free field berry muffins

Okay, what I’d like to say is “look at my fantastic muffins with their nice plump berries and beautiful white cake,” but alas I can’t: it would be a lie. Those muffins pictured below aren’t my muffins. They are somebody else’s muffins.

Why would I post a picture of someone else’s muffins, you ask? Because I just accidentally deleted 197 photos off of my hard drive. Those pictures included my pictures of these field berry muffins (along with two new breads and some fantastic spicy oatmeal cookies – not too mention the snowstorm we had a week ago… Oh and the woodpeckers and the deer that have been hanging around since). Some days I hate technology. It’s not like I ever accidentally threw away a canister of film. (Yes I remember actual film – I am old enough to know why cell phones make that clicky noise when they record an image.) And if I had of picked up a roll of film, opened my cupboard, pulled out my bin and “accidentally” dropped it in the trash, after I realized what a silly a** I’d been, I could have laughed it off, reached back in and plucked it right out again, ready to mail to the developers. (Yes, I remember that too.) Somehow I don’t think I can reach into this black box of mystery humming along beside me and recover my digital files…

Anyway, I digress. I wallow. I resort to clip art.  You’ll just have to trust me when I say that this recipe results in moist and fluffy vanilla muffins ready for your own add-ins. Here we used a berry mix but chocolate chips or nuts would also be great.

In our neck of the woods, July and August are high summer and high summer means BBQ’s and camp outs. If you’re looking for a gluten free dessert to go with your next outdoor dinner, try these gluten free turnovers made in foil packets and baked on the fire or on your BBQ. gf and me’s fireside pastry pockets – gluten free

pastry pockets-001This weekend is the Victoria Day long weekend, and in our neck of the woods that means it’s the unofficial start of summer. In honor of the season, we decided to post one of our best gluten free camping recipes. If you’re out camping, having a Bar-B-Que or just spending an evening by the fire or even beside the fireplace (it is Canada after all!) give these pastry pockets a try – you won’t be disappointed!

Cooked on a wooden dowel (purchased at any hardware store), they can be stuffed with an endless assortment of goodies. Try peanut butter and jam (Geoff’s favorite), Nutella (my favorite), our not-too-sweet cream cheese icing and a sprinkling of cinnamon (tastes like a cinnamon bun – fantastic!), and fruit flavoured yogurt (more healthful and still very tasty).

The recipe for these was inspired by don’t forget delicious‘s dough for “fastest cinnamon rolls.
