I found this fabulous recipe for cupcakes on fantasy author S. J. Wolff’s blog, Wolff’s Realm. I converted it and the result was awesome – they disappeared before I could even get a photo! So I made them again, added a ginger cookie and coconut crust, and didn’t tell anyone until I had a picture to post! The ginger and coconut flavours combined beautifully with the pumpkin, the crumbs added a bit of texture, and the tarts also came out of the pan easier.
This would also be great with Mary’s Magnificent Pie Crust!

This bread is chock full of of sugar and spice and everything nice. If you miss cinnamon buns, this recipe is for you. If you really want to be decadent, drizzle the top with a vanilla glaze or our not-too-sweet cream cheese icing.
The smell of this gluten free raisin bread in the oven is so AH-MAZ-ING, don’t be surprised if the neighbours come calling! And if they do, they will never guess it’s gluten free. When it is still warm, this bread is just a bit crispy on the outside and gooey in the middle. When it’s cooled and the flavours have melded, it has the taste and texture of a really good cinnamon bun.

Geoff and I have been A.F.K. (“away from keyboard”) these last few days, enjoying a much-needed break from the deep freeze of the Polar Vortex by escaping to the island of Maui. This post is a little different than our usual. Rural Route Lupiac, who makes some fantastic things on her blog, was looking for a Danish Butter Cookie recipe. My mom Mary happens to have THE BEST recipe, but because she makes dozens and dozens of them (and Geoff prefers English shortbread) we had never adapted her recipe to gluten free flours. I sent the recipe to Rural Route Lupiac to try and it sounds like she had great success using Cup 4 Cup flour. If you are like us and can’t get Cup 4 Cup, Rural Route Lupiac also has a great copy cat flour recipe on her blog. Check it out!
This recipe makes a large, rich cake that’s moist and full of chocolaty goodness. Great with chocolate icing for a double chocolate hit but we also recommend eating it naked (the cake, that is) or with a scoop of vanilla ice cream. Baked as a round layer cake, it’s also great for birthdays! TIP: If you like mocha, top your cake with coffee whip. Recipe included below.

Braised in a garlic and onion tomato sauce that is fantastic served over rice or gluten free noodles, this steak is melt-in-your-mouth tender. AND it is prepared in the slow cooker which is great on those busy days – summer or winter. Throw everything in the pot in the morning, turn it on, and dinner is ready at five o’clock – right when the last thing you feel like doing is cooking a meal!
