gfandme’s gluten free beef dip sandwich

I love beef dips and this is one of the best I’ve ever had – glutenous or non-glutenous. Based on our slow cooker roast beef recipe, the meat and the jus are slow roasted in a crock pot. The meat is fantastic on its own, nicely browned with lots of flavour, and the dip is salty and savory with just a hint of peppery hotness. The sandwich takes some effort, but it’s certainly worth it!gluten free beef dip sandwich

gf and me’s fireside pastry pockets – gluten free

pastry pockets-001This weekend is the Victoria Day long weekend, and in our neck of the woods that means it’s the unofficial start of summer. In honor of the season, we decided to post one of our best gluten free camping recipes. If you’re out camping, having a Bar-B-Que or just spending an evening by the fire or even beside the fireplace (it is Canada after all!) give these pastry pockets a try – you won’t be disappointed!

Cooked on a wooden dowel (purchased at any hardware store), they can be stuffed with an endless assortment of goodies. Try peanut butter and jam (Geoff’s favorite), Nutella (my favorite), our not-too-sweet cream cheese icing and a sprinkling of cinnamon (tastes like a cinnamon bun – fantastic!), and fruit flavoured yogurt (more healthful and still very tasty).

The recipe for these was inspired by don’t forget delicious‘s dough for “fastest cinnamon rolls.

This easy-to-do recipe makes a round flat loaf of amazing, lean, rustic bread. The crust is crisp and buttery and the crumb is tender and moist but not gummy. Great on its own, it’s fantastic with a bit of butter or margarine. saturday morning strawberry muffins – gluten free

strawberry muffins_2-001We had some leftover strawberries from making this salad and decided to use them up in some gluten free muffins. The delicate flavour of strawberry can easily be overpowered in baked goods, so to intensify the berry-ness of these muffins we use strawberry coulis both as a wet ingredient and as a garnish while serving. We also use mild and slightly sweet coconut and oat flours which compliment the strawberries, keep these muffins moist and light and pack nutrition and fibre into every bite. With your favorite morning cup of “pick me up,” these muffins make an awesome weekend breakfast!

This recipe can’t be easier. Just mix together these few ingredients, store in an airtight container, and you’ll always have your favorite taco seasoning at the ready. Add a little – or a lot – to flavour your taco fillings or use it to make a tasty taco salad. danish pastry – just like grandma made only gluten free!

I believe this may just be the best thing to come out of our kitchen to date! A conversion of my grandmother’s recipe, the pastry or kringle is crisp but still soft and flaky and can be wrapped around any kind of filling from apple to cherry, lemon or even cream cheese. It’s also relatively easy to make – especially if you have a food processor. The dough rolls out and bakes up like a dream!

danish pastry gluten freeMy Bedstemor (Danish for Grandmother) called this “Fodselsdag Kringle” but I knew it as Danish Birthday Cake. But Bedstemor didn’t just keep this kringle for birthdays. She ALWAYS had one on hand and it was ALWAYS apple. With my mom’s birthday coming up, I wanted to make something special, so I found bedstemor’s recipe and decided to give it a go and at the same time, convert it to gluten free. Boy, am I glad I did. This is truly some of the best baking I have ever done and will be a part of my go-to list of recipes from now on.

stained glass Easter cookies – gluten free, of course!

I have wanted to make stained glass cookies ever since I saw some gingerbread stars in a magazine last December. When I came across some small Easter-themed cookie cutters, I figured spring would be the time to give it a try!

The trick turned out to be finding a cookie dough that doesn’t spread too much. If the dough spreads while baking, it will obliterate the stained glass window in the middle. I tried to refine our brown sugar cookie recipe by adding more gf flour and using shortening instead of butter, but by the time I got the texture right, the cookie itself was dry and powdery. Then I remembered a recipe I’d seen on Simple Gluten Free Kitchen for linzer cookies and I decided to try it. It worked great! The dough rolled out nicely, didn’t spread too much, and the result is a mild almond and vanilla wafer. Besides stained glass cookies, these would be great glazed or sandwiched with jam or Nutella.
