Our thanksgiving stuffing (or dressing) is sweet and savory and with a tender bite. Based on a traditional family recipe that’s loaded with onions, raisins, and apples, it’s not too spicy and lets the flavours of all of the ingredients come through so that every mouthful is a bit different from the last. chicken and shrimp jambalaya

A while ago the telephone rang and it was our sister-in-law Tina inviting us over for an impromptu dinner. On the menu was an incredible chicken and shrimp Jambalaya that was absolutely jam-packed with spicy Cajun flavours and much healthier than the traditional version. She kindly gave us the recipe so we could share it here. Turns out, it’s from the cookbook Looney Spoons by Janet and Greta Podleski. Glancing through Tina’s copy, I see they have many fine looking gf recipes – might need to get a copy ourselves!.

What’s a tortizza, you ask? It’s the super-tasty, super-easy single-serving “cheater” gluten free pizza that uses the dough for gf and me’s potato flour tortillas for the crust. They make a great after school snack or quick lunch. Keep a jar full of the dry ingredients for the dough on hand and whip them up one or two at a time as you need them.

easy crusty bread – sshhh, it’s gluten free

Yes, we said “easy” and “bread” and no, that’s not an oxymoron. Crunchy on the outside and soft and chewy in the middle, this dairy free and gluten free crusty bread – an adaptation of no-knead bread – has a slight sourdough taste and the look and texture of an artisan loaf. Gluten Free Cheesy Egg Noodle Casserole

gf and me’s potato flour tortillas

These gluten free and dairy free tortillas taste like wheat tortillas and won’t go soggy when baked in dishes like enchiladas. They taste great and are easy to make. The recipe below makes 9 – 10 tortillas but you can also mix the dry ingredients together in a large batch and store in a sealed container. When you want a tortilla, combine the dry mix with water at a ration of about 2:1, adding water by the tablespoon if needed. In other words, one cup of dry ingredients and 1/2 cup water will make 4 four-inch tortillas, 1/2 cup dry ingredients and 1/4 cup water will make two!

potato flour tortilla. gfandme.comTIP: If you find yourself missing a good ol’ peanut butter sandwich, try slathering a tablespoon or two of your favorite peanut butter onto one of these. Amazing! OR Try one wrapped around a hotdog for a great summer treat.
