turkey for two: ready in 20 minutes
Having an intimate holiday or just want something healthful and quick for a midweek dinner? Here are two recipes for turkey that take no time at all and taste absolutely fantastic! Both create a moist, perfectly cooked turkey breast that can be sliced for dinner or saved in the refrigerator for those amazing turkey sandwiches everyone loves so much (on gf bread of course!)

Roast Turkey: Moist, Flavourful & Easy
The trick with turkey is to keep the white meat moist while waiting for the dark meat to cook through. Some people do this by basting the bird every 15 minutes, covering the breast with tinfoil, brining the bird overnight, even disassembling the whole thing and cooking the pieces separately. This recipe/method cooks the bird perfectly without brining, or deboning, or even fussing and basting. In fact, for this there is no turkey baster required! And you will end up with moist and tender white meat and amazingly flavorful dark meat.
This recipe is a combination of Ina Garten’s “Perfect Roast Turkey” recipe and my mom Mary’s awesome recipe for holiday turkey.

crispy on the outside, soft in the centre: gluten free slider buns
With a crisp, buttery crust and a soft crumb, these gluten free hamburger buns are sure to become one of your go-to recipes. Pictured here are a slider bun version, but you can make these any size you want so go ahead and have that quarter-pound burger… No one need know they are 30% whole grain! A variation on our tried and true lean crusty bread and white bread recipes, these buns are easy to make and taste fabulous. Even people who don’t like crusts tend to love the buttery saltiness that covers these! For the first time in years, Geoff preferred the bun to the burger!

Back-to-school is just around the corner and along with it comes the need for quick and easy gluten free meals. We find that on those busy days nothing beats a grilled sandwich, so here are four recipes for gluten free panini that were inspired by Dempster’s new Gluten Zero breads: ham and egg, pizza, pulled pork, and apple pie. All but the pulled pork sandwich are great hot or cold so you can make these ahead of time and pack them up in lunch bags to go! gf and me’s Orange and Honey Stir Fry
This is, I think, our favorite stir fry – it tastes fantastic, is super quick to throw together, and makes for an easy weeknight dinner. Serve it on a bed of jasmine rice and you’ll be in heaven. This stir fry has hints of orange and honey and as much heat as you want to add. Make it vegetarian by replacing the chicken with baby corn.

bbq cedar plank salmon – you won’t believe how easy this is!
A few minutes on the grill and you’re done —and it tastes beyond fantastic! The salmon is moist and succulent, you can just taste a hint of steamed cedar, and the brown sugar rub caramelizes to produce a slightly sweet yet savory coating. Serve this with jasmine rice and/or gf and me’s spinach salad for a quick and light meal packed with nutrition. Perfect for warm summer evenings.
