nourishment for living well’s almond flour raspberry muffins
These are some of the best muffins Geoff and I have ever tasted – including those we’d tried before going gluten free. But we figured they would be since the blog’s preamble to the recipe included: “This one is for you Mom, to give you some good recipes for the 5lb bag of almond flour I convinced you to buy!” Who wouldn’t post their absolute best almond flour recipe after saying that!
Geoff and I were intrigued by these muffins because they looked an awful lot like some almond flour muffins we’d purchased at a farmer’s market while on holiday and had been yearning for ever since. It turns out these are actually better than those market muffins. Thanks so much to Nourishment for Living Well for the recipe.

gf and me’s potato flour tortillas
These gluten free and dairy free tortillas taste like wheat tortillas and won’t go soggy when baked in dishes like enchiladas. They taste great and are easy to make. The recipe below makes 9 – 10 tortillas but you can also mix the dry ingredients together in a large batch and store in a sealed container. When you want a tortilla, combine the dry mix with water at a ration of about 2:1, adding water by the tablespoon if needed. In other words, one cup of dry ingredients and 1/2 cup water will make 4 four-inch tortillas, 1/2 cup dry ingredients and 1/4 cup water will make two!
TIP: If you find yourself missing a good ol’ peanut butter sandwich, try slathering a tablespoon or two of your favorite peanut butter onto one of these. Amazing! OR Try one wrapped around a hotdog for a great summer treat.

Any all purpose gf flour will work for these gluten free pancakes, but we like to use Cloud 9 – made in New Westminster, British Columbia and found at our local Costco. Made with Cloud 9 flour, these pancakes are high in fibre and protein and make a great meal Sunday morning or Tuesday night.

From all the forecasts, it looks like this weekend is going to be a hot one here in Red Deer, Alberta, so we decided to make a pitcher of our simple iced coffee. This would make a great après-dinner drink to share with someone special. Pour a couple of glasses and spend some time together in the sunshine. Served as is, it’s a refreshing and not too sweet treat on a warm afternoon, but top it with whipped cream and a drizzle of chocolate syrup and you’ll take it to a whole other level!

gf and me’s best ever french toast – gluten free no less
You have to try this amazingly decadent and totally gluten free version of French toast. The secret is to use gf and me’s easy banana bread for the base. The combination of sweet banana bread, cinnamon, nutmeg, and maple syrup will make you think you’re still dreaming. What a way to wake up!
Serve with sliced banana and the best maple syrup you can find. We have been using syrup from L.B. Maple Treat in St. Robert Bellarmin, Quebec, since we were given a bottle of their single press maple syrup for Christmas two years ago. Thanks again to our anonymous gift giver!
