Easy Gluten Free Fruit Bread

These were, without doubt, the best gluten free buns we’ve had so far. The crumb was tender and not too chewy and the flavour of the cinnamon, orange zest, and fruit was out of this world. You could even make these into a great hot cross bun – instructions included in the recipe.

gluten free fruit bunsWe stored the buns in a sealed container on the counter overnight and they were still good if a bit drier on day two. For day three, we toasted what was left and they tasted great. We will certainly be making these again, and again, and again ….

Pina Colada Almond Flour Muffins

Inspired by our trip to Maui, Geoff and I decided to try to make something that would bring together some tropical island flavours. Made with Tahitian vanilla, shredded and ground coconut, and chunks of fresh pineapple, these Pina Colada Muffins certainly do the trick. On top of all that, the almond flour base makes them hearty and the applesauce keeps them moist for days. We will certainly be making these again!   gluten free pineapple coconut muffinsThese are based on the almond flour raspberry muffins we posted earlier. Like those muffins, these should be stored in the fridge and taste even better the next day when the flavours have a chance to meld.

mary’s marvelous cream puffs – gluten free has never been so delicate!

Looking for a light and delicate yet quick and easy dessert? Try these delicately crisp-on-the-outside and oh-so-creamy-in-the-middle cream puffs. Serve them with Greek yogurt and fresh fruit at brunch or with whipped cream or whipped coconut milk, powdered sugar, and a drizzle of chocolate for a special dessert. To be truly decadent, try serving them with Food Mouth’s Whipped Nutella Fluff – WOW!

Cream PuffMy mom came across this recipe on a box of rice flour decades ago and has been making them ever since. They look like they took a French chef all day to prepare but are astonishingly easy to make and ready to eat in under an hour.

This is a re-post of an early recipe on “gf and me.” We made them the other day for a special birthday party, and they were so good we figured we’d share it again for all of those who have started following us since.

gluten free folded Cloud 9 biscuits

gluten free biscuitsThese hearty biscuits taste just like the baking powder biscuits my sister used to make when we were kids. Buttery and salty, they are made with Cloud 9 flour giving them the look of a buckwheat biscuit. Try folding them over some grated cheese before baking – awesome! They are good hot or cold but because they only last a day or two, the recipe is small producing only about 6 biscuits.

Try pairing these with our Swiss Steak, Baked Potato Soup, Chili or, for a lighter meal, our Strawberry Spinach Salad.

For other Cloud 9 recipes, try our Sunday morning pancakes, Mary’s gluten free pie crust, or gf and me’s nut butter cookies.

easy crusty bread – sshhh, it’s gluten free

Yes, we said “easy” and “bread” and no, that’s not an oxymoron. Crunchy on the outside and soft and chewy in the middle, this dairy free and gluten free crusty bread – an adaptation of no-knead bread – has a slight sourdough taste and the look and texture of an artisan loaf. It doesn’t keep for more than a few hours so the recipe produces a mini-loaf about the size of four dinner rolls. Scroll down for the recipe.gf crusty bread. gf and me 2013.
