easy crusty bread – sshhh, it’s gluten free

Yes, we said “easy” and “bread” and no, that’s not an oxymoron. Crunchy on the outside and soft and chewy in the middle, this dairy free and gluten free crusty bread – an adaptation of no-knead bread – has a slight sourdough taste and the look and texture of an artisan loaf. nourishment for living well’s almond flour raspberry muffins

These are some of the best muffins Geoff and I have ever tasted – including those we’d tried before going gluten free. But we figured they would be since the blog’s preamble to the recipe included: “This one is for you Mom, to give you some good recipes for the 5lb bag of almond flour I convinced you to buy!” Who wouldn’t post their absolute best almond flour recipe after saying that!

fireside pastry pockets: you’ll be the happiest camper around

pastry pockets-001Next time you have a campfire (or light your fireplace, or start your BBQ), give these pastry pockets a try – you won’t be disappointed! Cooked on a wooden dowel (purchased at any hardware store), they can be stuffed with an endless assortment of goodies. Try peanut butter and jam (Geoff’s favorite), Nutella (my favorite), our not-too-sweet cream cheese icing and a sprinkling of cinnamon (tastes like a cinnamon bun – just a bit crunchier), and fruit flavoured yogurt (more healthful and very tasty).

The recipe for these was inspired by don’t forget delicious‘s dough for “fastest cinnamon rolls.”

gf and me’s potato flour tortillas

These gluten free and dairy free tortillas taste like wheat tortillas and won’t go soggy when baked in dishes like enchiladas. They taste great and are easy to make. The recipe below makes 9 – 10 tortillas but you can also mix the dry ingredients together in a large batch and store in a sealed container. When you want a tortilla, combine the dry mix with water at a ration of about 2:1, adding water by the tablespoon if needed. In other words, one cup of dry ingredients and 1/2 cup water will make 4 four-inch tortillas, 1/2 cup dry ingredients and 1/4 cup water will make two!

potato flour tortilla. gfandme.comTIP: If you find yourself missing a good ol’ peanut butter sandwich, try slathering a tablespoon or two of your favorite peanut butter onto one of these. Amazing! OR Try one wrapped around a hotdog for a great summer treat.

trimble cake – believe it or not, this is gluten free

Trimble Cake is a luxurious Orange Chiffon Cake that my mom always made for birthdays or special occasions. She would bake it in a tube pan and ice it with sticky and oh-so-sweet seven-minute frosting. But baked in an oblong pan, it adds a delicious twist to strawberry shortcake, which is how it is prepared here. It’s named after the neighbour who generously gave my mom her amazing recipe.
