Chicken with Orange Sauce – 30 minutes or less and naturally gluten free
This meal is on the table in under thirty minutes, but it sure doesn’t look that way! And all that’s required are some chicken breasts, an orange, a few odds ‘n ends, and some spices. The recipe is versatile too – feel like an Asian influence – add more gf soy sauce, ginger, and peppers. Looking for something fresh and fruity, cut back on the spices and let the orange shine through. Truly easy peasy! (Scroll down for the recipe.)

I should probably admit that I am not a huge fan of football. I never really learned the rules of the game so by the middle of the Super Bowl’s first down, I’m usually staring blankly at the television screen wondering why my lawn never looks that good – or my butt for that matter!
What I am a huge fan of, however, is football parties and especially the party food! Chips and dip… pulled pork … bowls of chili with cheese and sour cream and little shavings of green onions sprinkled on top. You name it, I probably love it. (Explains the butt thing, doesn’t it…)
If you’re hosting a football party (or just want something to nibble on while you watch the game), here’s a round-up of Geoff and my favorite gluten free Super Bowl recipes. These are sure to please gluten eaters and non-gluten eaters alike.

gluten free slow cooker bread
As we’ve said before, come January we start pulling out the slow cooker for some mid-winter comfort foods. But slow cookers can be used for more than roasting and stewing, as this gluten free slow cooker bread demonstrates! This bread is heavy and sweet like a rye bread but I think my favorite thing about it is that it actually GETS BETTER WITH AGE! It’s good on the day you bake it, better the next day, and at its best the day after that. I think it’s the almond flour that keeps it moist and gets better as it slowly absorbs all the flavours. Whatever the reason, it’s not until day four that this bread finally starts to dry out and lose flavour. (I only know this because Geoff and I showed severe restraint while watching a wonderful golden loaf age away on our counter top. Four days was as much as we could take!) If you don’t like having a freezer full of half eaten loaves of gf bread, and you do like a heavy artisan-style loaf that has just a hint of Danish rye flavour, this is the recipe for you!

Made in the microwave, this gluten free (and dairy free) sponge cake is airy and not too sweet. breakfast tart: makes its own gluten free crust
For some reason, gluten free breakfasts seem to be hard to come by. Until Geoff was diagnosed with celiac disease, I had no idea how many breakfast foods contain gluten! His go-to breakfast is a home blend of different gf cereals but even this got a little boring after a while. In an attempt to mix things up a bit, we came came up with this recipe for gluten free breakfast tarts. Kind of like a gf mini-quiche, they use gluten free pancake mix to help them puff up nice and fluffy and to create their own light, cake-like pastry crust. Good hot or cold, they are a bit of a lifesaver on busy mornings – just make extra the first day and pull them out of the fridge as needed! They are also incredibly versatile. By adding different fillings, you can continually create new savoury flavours!

Our followers will know that we periodically switch out the backgrounds on our blog gfandme.com to suit the season or our culinary moods. Our latest background by Florida artist Jeanette Chupack with its winter windowscape and inviting table laden with simple fare happens to suit both! Entitled Winter Still Life, we particularly like the way it brings together and contrasts the two modes of painting, still life and landscape.
On her website, Jeanette writes that her ‘signature’ paintings typically emphasize “gardens and views from windows, usually with a related still life in the foreground” allowing her to “express the contrasts of a cultivated world of gardens, interiors and architecture with the natural landscape.” While they are all beautiful, Winter Still Life, commissioned by the original owners of Green Mountain Coffee Roasters, is one of our favorites.

vegetable beef soup – a gluten free bowl of homemade comfort
Well, the holidays are over and if you’re like me, you’re now thinking of ways to shed those extra holiday pounds! Salads are a great way to do just that, but when you live as far north as we do, it’s very likely -20 degrees Celsius and snowing outside, and a cold salad is just not all that appealing. In January, when I’m staring down three or four more months of winter, I want something comforting – something that will warm me up from the inside – and something that will help me recover from my holiday food hangover! This vegetable soup certainly fits the bill. Great with or without beef, it’s hearty, delicious, low calorie, and comforting.
This soup freezes well so make extra and store it for quick lunches or dinners on those busy winter days. If you are like Geoff and prefer something more substantial, this recipe can easily be converted into a quick vegetable or hamburger stew that can be served on a bed of rice.
