Do you have gluten free company coming and want to make a gf dessert, but don’t want to invest in the expensive flours and other ingredients? Or do you already cook gluten free but just want something quick and easy to throw together? The Betty Crocker gluten free Devil’s Food cake mix might be your answer. We had a dinner party for nine the other evening and wanted to focus on putting the meal together rather than on the dessert. We whipped one of these up and served it iced with gf maple walnut ice cream and alongside homemade Almond Roca, and homemeade Ferrero Roche (recipe coming soon). Our guests, all of varying ages (8 to 80) and NOT gluten free, said they couldn’t tell that it was a mix, let alone that it was gluten free.
The mix takes 1/2 cup butter, 1 cup water, and three eggs. You then beat for 2 to 3 minutes, pour into a greased pan and pop in the oven. Can’t get any easier. If you can’t have butter, find a no-butter recipe here.

We should also note that we have tried the Betty Crocker Gluten Free Yellow Cake mix and found that without the heavy chocolate, you could really taste the rice flour. the cake also seemed heavy for a white cake.

The mixes have certainly improved. The one I liked the most was Stonewall Kitchen vanilla cupcakes…vanilla being my favorite flavor.
