What is Geoff’s Chicken? Melt-in-your-mouth-tender pieces of chicken in a creamy tomato and onion sauce with hints of garlic and just a bit of peppery heat. Serve with rice and a tossed salad for a complete meal!
This is a conversion of one of Geoff’s all-time favorite meals. It takes a bit of time in the oven, but it’s super easy to prepare.
What you’ll need:
2 pounds of skinless, boneless chicken pieces (We prefer to use chicken thighs)
1 1/2 cups of gluten free mushroom sauce (or 1 can gluten free condensed mushroom soup)
1 – 14 ounce can of tomato sauce
¼ cup sour cream
1 onion chopped and sautéed (or ¼ cup onion flakes)
1 small tomato, chopped
½ teaspoon onion powder
½ teaspoon garlic powder
Pinch of red pepper flakes
Salt and pepper to taste
Green onion for garnish (optional)
What you’ll do:
Preheat oven to 350 degrees.
Place chicken pieces in the bottom of a large casserole or Dutch oven.
Sprinkle with garlic powder, salt, and pepper.
In mixing bowl, combine the rest of the ingredients (except green onion). Pour over the chicken and bake for 1 to 1½ half hours, or until chicken is tender. Remove from oven and let rest for 10 minutes before serving. Pour sauce over rice or mashed potatoes and garnish with green onions.
