This refreshing combination of citrus and mint is heavenly on a warm spring day. Play with the flavours: use lemons, limes, oranges or combine all three! For an extra special treat, “ice” your cake with a thin layer of your favorite marmalade. The recipe below is for a crustless cheesecake, but you can also use a pre-made gf crust (like Patsy Pie’s graham crust) or make your own.

geoff’s favourite oatmeal chocolate chip cookies (sshhhh…they’re gluten free)
These gluten free oatmeal chocolate chip cookies are crunchy on the outside, chewy in the middle, and full of the rich flavours of chocolate and coconut. Make a double batch ’cause they won’t last long!
Oats lower cholesterol, are an excellent source of plant protein, and good source of iron. However, not everyone who has celiac disease can tolerate them, even when the oats are gluten free. If you have questions, talk to your physician or dietitian.

Great for casual dinners, outdoor parties, or camping, these potatoes taste awesome and can be done in the oven, on the grill, or even in your Tfal actifry fryer. They go with everything from chicken to burgers to steak!
Be creative with the spices. We like this chili version but equal amounts of dill, basil, thyme, marjoram, oregano and pepper flakes works wonderfully too.
Sinful Chocolate Mousse Cake – no flour required!
This no flour chocolate cake is OVERLOADED with divine CHOCOLATE and melt in your mouth goodness. And like most recipes on gf and me, it’s surprisingly easy to make.
Don’t be surprised if the neighbours come calling when it’s in the oven. It smells THAT good!
