What’s the secret ingredient? Mashed potatoes and they have never tasted so good!
What you’ll need
½ cup hot mashed potatoes (you can use leftovers heated in the microwave)
TIP: Of course, for diary free and egg free cookies, make sure the potatoes were made without cream, butter, or eggs
4 cups finely shredded GF coconut
1 1/2 cups GF icing sugar
1 teaspoon GF vanilla
¼ teaspoon salt
What you’ll do:
Combine coconut, icing sugar, vanilla and salt. Mix well.
Add mashed potatoes and mix.
Roll into balls and flatten on waxed paper to set.
And that’s it!
To make eggless Easter Eggs:
Flatten cookies into egg shapes and decorate with icing and sprinkles or paint with food colouring. Happy Easter!
