This light spinach salad is tangy and sweet with a hint of orange. Perfect for those warm sunny days! Also great as a side dish with fish or ham.
What you’ll need:
6 cups fresh spinach
1 orange, cut in half
6 strawberries, thinly sliced
1/4 cup salad oil
1/4 cup white sugar
1/4 cup vinegar
slivered almonds (toasted) (optional)
What you’ll do:
Rinse and drain spinach. Sprinkle with sliced strawberries.
Peel one half of the orange and cut into bite-sized pieces. Sprinkle on salad.
Toast slivered almonds on cookie sheet in 250° oven until browned, stirring every 5 minutes. Sprinkle on salad.
Squeeze the juice from the rest of the orange. Mix juice together with the oil, vinegar, and sugar. Pour over salad or into a small bottle to serve dressing on the side.
